Ingredients

The caramel coating

  • 2 T brown sugar
  • ½ T light corn syrup
  • ½ T butter
  • 1/8 tsp cinnamon (optional)

The nuts

  • ½ C nuts (macadamia, pecans, walnuts, etc.)

Instructions

  1. Combine brown sugar, corn syrup, butter, and cinnamon in a non-stick skillet over medium heat.
  2. Stir the mixture until it bubbles.
  3. Add the nuts and stir to coat them in the caramel mixture.
  4. Cook for 5-7 minutes, stirring constantly until the nuts are golden brown and smell toasted.
  5. Alternatively, transfer the coated nuts to a parchment-lined baking sheet and bake at 400°F, stirring every 1-2 minutes until toasted.
  6. Transfer the nuts to foil or parchment to cool completely.
  7. Break apart and enjoy.
