Grilled Caprese Toast with Burrata Cheese + Grilled Avocados

Ingredients

The toast

  • 1 loaf crusty sourdough or ciabatta bread
  • 2 large ripe but firm avocados
  • sufficient amount olive oil
  • 1 clove garlic
  • to taste salt and pepper
  • 8 ounces burrata cheese
  • 1 bunch fresh basil
  • 4-6 heirloom tomatoes

Balsamic drizzle

  • ½ cup balsamic vinegar
  • 1 teaspoon brown sugar (optional)

Instructions

  1. Prepare the balsamic drizzle by combining balsamic vinegar and brown sugar in a saucepan, bring to a boil, then simmer until reduced by half.
  2. Preheat the grill or oven to high heat.
  3. Drizzle olive oil on both sides of the bread slices and rub with the halved garlic clove, then season with salt and pepper.
  4. Drizzle olive oil on the avocado slices and season with salt and pepper.
  5. Grill the bread and avocado slices for about 2-3 minutes per side until lightly charred.
  6. Cut the burrata and distribute it on the grilled toast, then top with fresh basil, grilled avocado slices, and tomato slices.
  7. Drizzle with more olive oil and serve with the balsamic drizzle.
