Sweet Potato Blondies

Instructions
- Preheat the oven to 350°F and line a small cake pan with parchment paper.
- Wrap sweet potatoes in foil and bake for 45-60 minutes until fork tender, then mash in a bowl.
- Melt the almond butter and mix it with the sweet potato puree, cocoa powder, and sugar in a large mixing bowl.
- Pour the mixture into the prepared pan and bake for around 20 minutes until a cake tester comes out clean.
- Allow the blondies to cool completely before slicing into squares and refrigerate for 1-2 hours before serving.
