Ingredients

  • 1 cup sweet potato, mashed
  • ½ cup almond butter
  • 2 tablespoons cocoa powder
  • ¼ cup sugar (optional)

Instructions

  1. Preheat the oven to 350°F and line a small cake pan with parchment paper.
  2. Wrap sweet potatoes in foil and bake for 45-60 minutes until fork tender, then mash in a bowl.
  3. Melt the almond butter and mix it with the sweet potato puree, cocoa powder, and sugar in a large mixing bowl.
  4. Pour the mixture into the prepared pan and bake for around 20 minutes until a cake tester comes out clean.
  5. Allow the blondies to cool completely before slicing into squares and refrigerate for 1-2 hours before serving.
