Instructions
- Remove the leaves from the broccoli rabe stems and wash them.
- Tear large leaves into smaller pieces and place them in a large bowl.
- Toast the sunflower seeds in a skillet over medium heat until golden.
- In a small bowl, whisk together olive oil, lemon juice, mustard, garlic, and salt.
- Pour the dressing over the broccoli rabe and massage it into the leaves.
- Add chopped celery, grated Parmesan, toasted sunflower seeds, and dried cranberries to the bowl.
- Toss the salad and serve immediately.
