Massaged Broccoli Rabe Salad

Ingredients

The salad

  • 2 bunches broccoli rabe
  • ¼ cup sunflower seeds
  • ½ cup chopped celery
  • cup grated Parmesan cheese
  • ¼ cup dried cranberries

Lemony dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon juice
  • ½ teaspoon Dijon mustard
  • 1 large clove garlic
  • ¼ teaspoon salt

Instructions

  1. Remove the leaves from the broccoli rabe stems and wash them.
  2. Tear large leaves into smaller pieces and place them in a large bowl.
  3. Toast the sunflower seeds in a skillet over medium heat until golden.
  4. In a small bowl, whisk together olive oil, lemon juice, mustard, garlic, and salt.
  5. Pour the dressing over the broccoli rabe and massage it into the leaves.
  6. Add chopped celery, grated Parmesan, toasted sunflower seeds, and dried cranberries to the bowl.
  7. Toss the salad and serve immediately.
