Ingredients

The Cookies

  • ½ cup granulated sugar, for dipping

The Chocolate Frosting

  • ½ cup salted butter, softened
  • 1 tablespoon sour cream
  • ½ teaspoon vanilla extract
  • 2 cups powdered sugar
  • cup unsweetened or Dutch-process cocoa powder
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (or 325°F for convection) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine the butter, peanut butter, oil, granulated sugar, and powdered sugar, then mix until creamy.
  3. Add the sour cream, eggs, and vanilla, mixing until well combined.
  4. Gradually add the flour and mix until just combined, avoiding overmixing.
  5. Scoop the dough into 2-tablespoon balls and place them on the baking sheets, spacing them apart.
  6. Press each cookie down with a sugar-dipped glass to flatten them to about ¼-inch thick.
  7. Bake for 7-8 minutes until just set, being careful not to overbake.
  8. Let the cookies cool on the sheets for a few minutes before transferring them to a cooling rack.
  9. For the frosting, mix together the butter, sour cream, and vanilla until creamy, then add the powdered sugar, cocoa powder, and cream, mixing until fluffy.
  10. Frost the cooled cookies and add chocolate sprinkles if desired.
