Simple Tuna Rotini Salad

Ingredients

  • cup dry rotini
  • 1 5oz can chunk light tuna fish, in water, drained
  • ½ cup plain Greek yogurt
  • 1 roasted sweet pepper, chopped
  • 1 rib celery, finely chopped
  • 1 Lebanese cucumber, diced
  • 2 green onions, finely chopped
  • 3 tbsp sliced green olives
  • 2 tbsp chopped walnuts
  • 2 tbsp raisins
  • 2 tbsp finely chopped fresh parsley
  • 1 tbsp Dijon mustard
  • ¼ tsp Himalayan salt
  • ¼ tsp ground black pepper

Instructions

  1. Cook the pasta in salted boiling water according to package instructions.
  2. While the pasta is cooking, combine the rest of the ingredients in a large bowl and toss to combine.
  3. Drain the cooked pasta and rinse it under cold running water.
  4. Add the cold pasta to the rest of the ingredients and toss to combine.
  5. Serve immediately or refrigerate for about an hour to allow flavors to meld.
