Cilantro Chimichurri

Ingredients

  • 1 cup fresh Flat-Leaf Parsley, packed
  • ½ cup fresh Cilantro, packed
  • 2 tsp fresh Oregano, finely chopped
  • 2 cloves fresh Garlic, minced
  • 2 tbsp Shallots, finely chopped
  • 2 tsp fresh Lemon Juice
  • 2 tsp Red Wine Vinegar
  • ¼ cup Extra Virgin Olive Oil
  • ½ tsp Smoked Paprika (optional)
  • to taste Flaky Sea Salt
  • to taste freshly cracked Black Pepper

Instructions

  1. Combine parsley, cilantro, oregano, and shallots in a small bowl.
  2. Add minced garlic and lemon juice, then season with a pinch of salt and mix.
  3. Stir in smoked paprika (if using), red wine vinegar, and olive oil, and season with salt and pepper to taste.
  4. Cover and refrigerate for about an hour before serving, or serve immediately.
