Cilantro Chimichurri

Instructions
- Combine parsley, cilantro, oregano, and shallots in a small bowl.
- Add minced garlic and lemon juice, then season with a pinch of salt and mix.
- Stir in smoked paprika (if using), red wine vinegar, and olive oil, and season with salt and pepper to taste.
- Cover and refrigerate for about an hour before serving, or serve immediately.
