Whipped Feta Crostini

Ingredients

The crostini

  • 12 ounces French baguette cut into ½-inch diagonal slices
  • tablespoons extra virgin olive oil
  • 1 teaspoon minced garlic (optional)
  • 6 ounces feta cheese
  • teaspoons milk or cream
  • ¼ teaspoon ground black pepper

The toppings

  • to taste diced tomatoes and fresh basil
  • to taste smoked salmon and dill
  • to taste thinly sliced apples or pears and honey
  • to taste diced roasted red peppers and kalamata olives
  • to taste cooked crumbled bacon and chives
  • to taste spicy pepper jelly
  • to taste prosciutto and balsamic drizzle
  • to taste chopped fresh herbs

Instructions

  1. Preheat the oven to 400°F and brush a baking sheet with olive oil.
  2. Arrange baguette slices in a single layer on the sheet and brush the tops with olive oil.
  3. Bake for 5 minutes, flip the crostini, and bake for another 5 to 6 minutes until golden.
  4. In a food processor, whip the feta for 30 seconds, then add olive oil, milk or cream, and black pepper, whipping until creamy.
  5. Spread the whipped feta mixture on each baguette slice and add desired toppings.
