Ingredients

  • 1 ½ teaspoons dairy-free, soft margarine
  • ½ teaspoon minced fresh ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon cardamom
  • 1 tablespoon maple syrup (optional)
  • ½ cup apple juice, unfiltered, unsweetened
  • 2 tablespoons whisky (optional)
  • 2 large quince (8 ounces each), cored, peeled, thinly sliced
  • 2 large apples (8 ounces each), cored, peeled, thinly sliced
  • ¼ cup raisins
  • ¼ cup coarsely chopped walnuts

Instructions

  1. Heat margarine, ginger, cinnamon, cardamom, maple syrup, apple juice, and whisky in a medium pot until bubbly.
  2. Add sliced quince, apple, and raisins, stir well, and cover the pot.
  3. Cook for 10 to 12 minutes, stirring occasionally, until the apples are tender yet firm.
  4. Add walnuts and serve warm.
