Garlic Confit Whipped Feta Dip

Instructions
- Prepare the garlic confit by heating all ingredients in a saucepan on low for about 30 minutes until the garlic is soft.
- Remove from heat and set aside, transferring ⅓ cup of garlic to a small bowl.
- For the whipped feta, combine ¼-⅓ cup of garlic confit (drained), feta, lemon juice, lemon zest, salt, garlic confit oil, and chili flakes in a food processor and blend until smooth.
- Taste and adjust seasoning as needed.
- Serve in a bowl, topped with remaining garlic confit, chili flakes, and a drizzle of garlic confit oil.
- Enjoy with toasted pitas or crostini.
