Garlic Confit

Ingredients

  • 10 heads garlic cloves, peeled
  • 8-10 sprigs fresh thyme
  • 1 tbsp black peppercorns
  • 1 tsp red chili flakes (optional)
  • 2 small bay leaves
  • cups pure olive oil

Instructions

  1. Add all ingredients to a medium-large saucepan or pot.
  2. Cook on low heat for around 30 minutes without boiling until the garlic is buttery and creamy.
  3. Use a slotted spoon to transfer the garlic to a large jar.
  4. Store the garlic confit in the fridge for up to 3 weeks.
