Ingredients

The garlic

  • 2-3 heads garlic

The oil

  • enough to cover olive oil, avocado oil, or grapeseed oil

Optional herbs

  • to taste herbs (such as rosemary or thyme)

Instructions

  1. Peel all the garlic cloves.
  2. Place the garlic cloves in a small pan with any optional herbs.
  3. Pour enough oil into the pan to completely cover the garlic cloves.
  4. Heat the pan over medium heat until small bubbles form around the garlic.
  5. Reduce the heat to a slow simmer and cook for 30 minutes, stirring occasionally.
  6. Remove from heat and allow the oil to cool completely.
  7. Strain off the herbs and store the garlic confit in a clean jar in the fridge.
