Margherita Pizza Dip

Ingredients

The dip

  • 2-3 medium or 4 small tomatoes
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 8 ounces cream cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup + 2 tablespoons parmesan cheese
  • ½ teaspoon garlic powder
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 8 ounces fresh burrata cheese
  • to taste fresh basil

For serving

  • to taste toasted bread/crostini

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Arrange the sliced tomatoes on the baking sheet and drizzle with olive oil, then sprinkle with salt, pepper, and grated parmesan.
  3. Bake the tomatoes for 20-25 minutes until they begin to char.
  4. Reduce the oven temperature to 375°F and grease an 8-inch baking dish.
  5. In a bowl, mix together the cream cheese, mozzarella, ½ cup parmesan, garlic powder, basil, oregano, salt, and pepper until combined.
  6. Spread the cheese mixture in the prepared baking dish and bake for 15 minutes until bubbly.
  7. Remove from the oven, add the roasted tomatoes and burrata, and bake for another 10 minutes until golden brown.
  8. Top with fresh basil and serve with toasted bread.
