Ingredients

The dough

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 3 cups mozzarella cheese, low moisture and shredded
  • 2 ounces cream cheese, softened
  • 2 large eggs

The topping

  • 1 cup mozzarella cheese
  • ½ cup parmesan cheese, freshly grated
  • ¼ cup parsley, to serve

Instructions

  1. Preheat the oven to 200C/400F and line a baking tray with parchment paper.
  2. Whisk together the almond flour and baking powder in a small bowl.
  3. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese and microwave until warm, whisking until smooth.
  4. Transfer the melted cheese to a food processor, add the eggs and dry ingredients, and blend until smooth.
  5. Roll out the dough into a large oval shape on parchment paper.
  6. Sprinkle the shredded cheese on top, leaving a ½ inch border around the edges.
  7. Bake for 10-12 minutes until the cheese is golden brown.
  8. Sprinkle with chopped parsley, slice, and serve.
