Instructions
- Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
- If using yeast, mix warm water, inulin, and yeast in a bowl and let it bloom for 10-15 minutes.
- In a food processor, combine almond flour, baking powder, and eggs.
- Melt mozzarella and cream cheese together in a microwave or double boiler.
- Add the melted cheese to the food processor and process until a dough forms.
- Once the yeast is frothy, add it to the food processor and pulse until combined.
- If the dough is sticky, chill it for 15-30 minutes.
- Form the dough into a disc on the baking sheet, about ¾ inch tall and 7 inches in diameter.
- Cut the dough into a grid pattern without cutting all the way through.
- Mix melted butter, Italian seasoning, and garlic powder, then brush it over the dough.
- Stuff shredded mozzarella into the cuts of the dough.
- Bake for 15-18 minutes until golden and cooked through.
