No Bake Banana Bread Bites with Bourbon

Ingredients

The base

  • 1 cup banana chips
  • ½ cup pecans or walnuts (chopped or halved)
  • ¾ to 1 cup almond flour
  • cup almond butter
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • 1 pinch sea salt
  • 1 tsp vanilla
  • ¼ cup honey or maple syrup (if vegan)
  • 1–2 tbsp bourbon

For rolling

  • to taste coconut sugar
  • to taste extra cinnamon/spices

Instructions

  1. Grind the banana chips lightly in a food processor and transfer them to a mixing bowl.
  2. Add almond flour, cinnamon, nutmeg, and almond butter, and mix well.
  3. Gradually add honey, mixing until combined. If the mixture is too runny, add more almond flour.
  4. Incorporate bourbon and vanilla, mixing thoroughly.
  5. Chill the batter in the fridge for 30 minutes or in the freezer for 10 minutes to firm up.
  6. Once set, roll the mixture into 1-1.5 inch balls and place them on a tray lined with parchment paper.
  7. Freeze the balls for 20-30 minutes.
  8. Dust with coconut sugar and additional cinnamon if desired, then store in a sealed container.
