Instructions
- Prepare the corn by peeling back the husks and removing the silk, then tie the husks with string.
- Brush the corn with olive oil lightly.
- Prepare the grill or oven to medium-high heat and brush with olive oil.
- Grill the corn for about 4 minutes on each side until grill marks appear.
- In a bowl, mix mayonnaise, sour cream, Cotija cheese, spices, garlic, and cilantro to create the cream mixture.
- Once the corn is done, coat it with the cream mixture using a spatula.
- Sprinkle with additional cheese, cilantro, and chili powder before serving.
