Ingredients

The corn

  • 4 ears Corn
  • 1 Tablespoon Olive Oil

The cream mixture

  • ¼ cup Mayonnaise
  • ¼ cup Sour Cream
  • ½ cup Cotija Cheese, crumbled
  • teaspoon Chipotle Chili Powder
  • ¼ teaspoon Cumin
  • ½ teaspoon Chili Powder
  • 1 clove Garlic, pressed
  • 2 Tablespoons Cilantro, chopped
  • 4 pieces Lime Wedges

Instructions

  1. Prepare the corn by peeling back the husks and removing the silk, then tie the husks with string.
  2. Brush the corn with olive oil lightly.
  3. Prepare the grill or oven to medium-high heat and brush with olive oil.
  4. Grill the corn for about 4 minutes on each side until grill marks appear.
  5. In a bowl, mix mayonnaise, sour cream, Cotija cheese, spices, garlic, and cilantro to create the cream mixture.
  6. Once the corn is done, coat it with the cream mixture using a spatula.
  7. Sprinkle with additional cheese, cilantro, and chili powder before serving.
