Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Marinate portobello mushrooms in balsamic vinegar, oil, salt, and pepper for 10 minutes, brushing or shaking to coat.
- Prepare vegetables and garlic on the baking sheet, toss with oil, salt, pepper, and herbs, and bake for 20-25 minutes until golden brown.
- Heat a skillet over medium heat and cook the marinated mushrooms for about 4-5 minutes on each side until caramelized.
- Assemble the pizzas by placing mushrooms on a baking sheet and adding pizza sauce, roasted veggies, garlic, and vegan cheese.
- Bake for 15-20 minutes until hot and the cheese is slightly golden.
- Serve with optional toppings like sun-dried tomatoes, fresh basil, balsamic drizzle, red pepper flake, and vegan parmesan.
