Instructions
- Preheat the oven to 400°F and bake the bacon until crispy, then dice it.
- Increase the oven temperature to 425°F and prepare baking sheets with olive oil.
- Slice the sweet potatoes into thin rounds and arrange them on the baking sheets.
- Brush the sweet potato slices with olive oil and season with salt and pepper.
- Bake the sweet potatoes for 20-25 minutes, flipping halfway through, until golden brown.
- In a bowl, mash the avocados with lime juice, remaining salt, and smoked paprika.
- Once the sweet potato slices are done, top each with the avocado mixture, diced bacon, and cilantro.
