Ingredients

The Sweet Potato Bites

  • 1 large sweet potato
  • 2 tablespoons olive oil

The Guacamole

  • 4 small avocados
  • ½ cup cilantro
  • 2-3 tablespoons lime juice
  • tablespoons red wine vinegar
  • ½ teaspoon red pepper flakes
  • to taste salt

The Cajun Shrimp

  • 1 pound large shrimp
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon chipotle chili powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F.
  2. Prepare a baking sheet with tin foil and coat it with 1 tablespoon of olive oil.
  3. Place the sweet potato slices on the baking sheet and brush the tops with the remaining olive oil and season with salt.
  4. Bake the sweet potato slices for 10 minutes, then flip and bake for an additional 5-7 minutes.
  5. In a food processor, combine avocados, cilantro, lime juice, red wine vinegar, red pepper flakes, and salt. Pulse until smooth.
  6. In a bowl, toss the shrimp with smoked paprika, ground cumin, sea salt, and chipotle chili powder.
  7. Heat a skillet over medium-high heat, add olive oil, and cook the shrimp for 2-3 minutes per side.
  8. Assemble by topping each sweet potato slice with guacamole and a shrimp, then garnish with cilantro.
