The Cajun Shrimp

Instructions
- Preheat the oven to 425°F.
- Prepare a baking sheet with tin foil and coat it with 1 tablespoon of olive oil.
- Place the sweet potato slices on the baking sheet and brush the tops with the remaining olive oil and season with salt.
- Bake the sweet potato slices for 10 minutes, then flip and bake for an additional 5-7 minutes.
- In a food processor, combine avocados, cilantro, lime juice, red wine vinegar, red pepper flakes, and salt. Pulse until smooth.
- In a bowl, toss the shrimp with smoked paprika, ground cumin, sea salt, and chipotle chili powder.
- Heat a skillet over medium-high heat, add olive oil, and cook the shrimp for 2-3 minutes per side.
- Assemble by topping each sweet potato slice with guacamole and a shrimp, then garnish with cilantro.
