One Bowl Brownies

Ingredients

  • ½ cup unsalted butter or canola oil or extra-virgin olive oil
  • 1 cup granulated sugar
  • ½ cup powdered sugar
  • cup cocoa powder
  • 1 teaspoon espresso powder (optional)
  • ¾ teaspoon kosher salt
  • 2 tablespoons water
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¼ cup whole wheat flour or additional all-purpose flour
  • ½ cup dark chocolate chips
  • to taste optional flaky sea salt

Instructions

  1. Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper.
  2. In a heat-proof bowl over simmering water, combine butter, granulated sugar, powdered sugar, cocoa powder, espresso powder, and salt until melted and mixed.
  3. Remove from heat and let cool slightly, then add water, vanilla, and eggs one at a time, stirring until shiny.
  4. Mix in the all-purpose and whole wheat flour until just combined, then fold in the chocolate chips.
  5. Transfer the batter to the prepared pan and smooth the top.
  6. Bake for 25 to 30 minutes until a toothpick comes out mostly clean.
  7. Let cool completely in the pan before lifting out and cutting into squares.
