Mashed Sweet Potatoes with Ginger

yams or sweet potatoes, sliced into ½ inch thick disks, skin on

coconut oil, butter, ghee, or olive oil

shallot, finely diced

fresh ginger, grated or paste

Instructions
- Slice the sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, then cover and simmer for 12-15 minutes.
- Once the sweet potatoes are fork tender, drain them, saving the water.
- In the same pot, heat the olive oil, butter, or coconut oil over medium heat and add shallots, ginger, and garlic, stirring until fragrant and golden for about 2-3 minutes.
- Add the sweet potatoes back into the pot and mash them using a potato masher, adding some of the reserved sweet potato water to loosen it, or place everything in a food processor to whip until silky smooth.
- Season with salt and pepper, and top with maple pecans for added crunch if desired.
