Quick Garlic Parmesan Broccoli

Ingredients

The broccoli

  • 2 crowns broccoli

The seasoning

  • 1 lb lemon
  • 2 Tbsp olive oil (or butter)
  • 2 cloves garlic
  • 1 Tbsp grated Parmesan
  • to taste Salt
  • to taste freshly ground pepper

Instructions

  1. Peel the tough skin from the lower portion of the broccoli stems and cut the florets with a bit of stem attached.
  2. Zest the lemon and set the zest aside.
  3. Add water to a pot, place a steam basket inside, and add the broccoli. Cover and steam for about five minutes until bright green and slightly crisp.
  4. While steaming, sauté minced garlic in olive oil over medium heat until fragrant.
  5. Transfer the steamed broccoli to the skillet with garlic, add lemon juice, and toss to coat.
  6. Season with salt and pepper, then top with grated Parmesan and lemon zest.
  7. Optionally, broil for a minute to toast the Parmesan.
