Roasted Broccoli with Garlic, Lemon and Parmesan

Ingredients

The broccoli

  • 2 lbs broccoli

The seasoning

  • 2 cloves garlic
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • to taste freshly ground black pepper
  • zest from 1 lemon lemon zest
  • juice from ½ lemon freshly squeezed lemon juice
  • ½ cup freshly grated Parmesan cheese
  • to taste sea salt

Instructions

  1. Preheat the oven to 425°F.
  2. Cut the broccoli into florets and place them on a sheet pan in a single layer.
  3. Add the sliced garlic, drizzle with olive oil, and sprinkle with kosher salt and pepper.
  4. Toss to coat the broccoli evenly and spread into a single layer.
  5. Roast for 20 to 25 minutes until the broccoli is crisp-tender and some florets are browned.
  6. Remove from the oven and toss with lemon zest, lemon juice, and Parmesan cheese.
  7. Adjust seasoning with more olive oil, lemon juice, salt, and pepper to taste.
