Smoked Sausage, Peppers, and Onions

Instructions
- Preheat the smoker to 250°F and add wood chips.
- Allow the sausage to come to room temperature.
- Slice the peppers and onions into strips.
- Combine the peppers and onions in a foil pan with olive oil, salt, pepper, and garlic powder, then cover with aluminum foil.
- Place the sausage in another foil pan, lightly coating with olive oil, and leave uncovered.
- Smoke both pans for one hour.
- Remove the foil from the peppers and onions, stir, and place the sausage on top.
- Return to the smoker uncovered and cook for another hour or until the sausage reaches 165°F.
- Serve as desired, either on a hoagie roll or on its own.
