Ingredients

The strawberries

  • 12 pieces strawberries

The chocolate mixture

  • 50 grams cacao butter
  • 15 grams coconut butter
  • 10 grams cacao powder
  • 10 grams powdered maple sugar
  • 2 grams sunflower lecithin powder
  • ½ gram vanilla powder
  • 1 pinch Celtic sea salt

Instructions

  1. Melt cacao butter in a small pot over very low heat.
  2. Stir in coconut butter and remove from heat.
  3. Measure dry ingredients using a scale.
  4. Combine cacao powder, maple sugar, lecithin, vanilla, and salt in a small bowl.
  5. Grind the dry ingredients in a coffee grinder.
  6. Mix the dry ingredients into the cacao butter mixture using a whisk.
  7. Refrigerate the mixture for 20 minutes.
  8. Whisk the mixture again and dip each strawberry into the chocolate mixture.
  9. Place dipped strawberries on a parchment-lined baking sheet.
  10. Refrigerate for 10 minutes.
  11. Remelt the chocolate over very low heat and refrigerate for another 10 minutes.
  12. Dip each strawberry a second time and refrigerate for an additional 10 minutes.
  13. Serve the chocolate-covered strawberries.
