Ingredients

The strawberries

  • 12 pieces strawberries

The chocolate mixture

  • 50 grams cacao butter
  • 15 grams coconut butter
  • 10 grams cacao powder
  • 10 grams maple sugar, powdered
  • 2 grams sunflower lecithin powder
  • ½ gram vanilla powder
  • a pinch celtic sea salt

Instructions

  1. Melt cacao butter in a small pot over very low heat.
  2. Stir in coconut butter and remove from heat.
  3. Measure dry ingredients: cacao powder, maple sugar, lecithin, vanilla, and salt into a small bowl.
  4. Grind dry ingredients in a coffee grinder.
  5. Mix dry ingredients into the cacao butter mixture using a whisk.
  6. Refrigerate the mixture for 20 minutes.
  7. Whisk the mixture again and dip each strawberry into the chocolate mixture.
  8. Place dipped strawberries on a parchment paper lined baking sheet.
  9. Refrigerate for 10 minutes.
  10. Remelt the chocolate over very low heat and refrigerate for another 10 minutes to set.
  11. Dip each strawberry a second time and refrigerate for 10 minutes before serving.
