Ingredients

The batter

  • 1 ¼ cups all-purpose flour
  • ½ cup sugar
  • ½ cup Stevia in the raw
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ¼ cup light butter
  • 2 Tbsp fat-free milk
  • 1 tsp vanilla extract
  • ¼ cup semisweet chocolate chips

The toppings

  • 3 pieces Reeses peanut butter cups

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the flour, sugar, Stevia, baking powder, and salt.
  3. In a separate bowl, lightly beat the eggs, then add the melted butter, milk, and vanilla extract, stirring well.
  4. Combine the egg mixture with the flour mixture and stir until well combined.
  5. Slowly add in the chocolate chips.
  6. Coat a 9 x 9 inch pan with cooking spray and spread the batter evenly in the pan.
  7. Sprinkle the chopped Reeses peanut butter cups over the top of the batter.
  8. Bake for 20 minutes or until a toothpick comes out clean.
  9. Allow to cool and enjoy!
