Easy Peanut Butter Chocolate Graham Cracker Toffee

Instructions
- Preheat the oven to 350°F and line a half sheet pan with foil.
- Arrange the graham crackers in a single layer in the pan.
- In a saucepan, melt the butter with brown sugar and granulated sugar, then bring to a simmer for 5-6 minutes.
- Remove from heat, whisk in vanilla, and pour the mixture over the graham crackers, spreading it evenly.
- Bake in the oven for 10 minutes.
- Dollop peanut butter over the warm toffee and spread it evenly once melted.
- Sprinkle chocolate chips over the peanut butter and return to the oven for a few minutes to melt.
- Spread the melted chocolate over the peanut butter and top with chopped nuts if desired.
- Let the toffee cool completely, then refrigerate for 1-2 hours before breaking into pieces.
