Ingredients

The base

  • 15-16 pieces rectangular graham crackers

The caramel

  • 1 cup salted butter
  • cup packed light brown sugar
  • cup granulated sugar
  • ½ teaspoon vanilla extract

The toppings

  • 1 cup creamy peanut butter
  • 1 ½ to 2 cups chocolate chips
  • 1 cup chopped, toasted nuts

Instructions

  1. Preheat the oven to 350°F and line a half sheet pan with foil.
  2. Arrange the graham crackers in a single layer in the pan.
  3. In a saucepan, melt the butter with brown sugar and granulated sugar, then bring to a simmer for 5-6 minutes.
  4. Remove from heat, whisk in vanilla, and pour the mixture over the graham crackers, spreading it evenly.
  5. Bake in the oven for 10 minutes.
  6. Dollop peanut butter over the warm toffee and spread it evenly once melted.
  7. Sprinkle chocolate chips over the peanut butter and return to the oven for a few minutes to melt.
  8. Spread the melted chocolate over the peanut butter and top with chopped nuts if desired.
  9. Let the toffee cool completely, then refrigerate for 1-2 hours before breaking into pieces.
