Ingredients

The custard

  • 1 orange zest and ¼ cup juice
  • 1 package silken tofu (12.3 ounces, 350 grams)
  • ¼ cup maple syrup
  • 3 tablespoons olive oil (or melted coconut oil, avocado oil)
  • 1 cup plant-based milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

The bread and fruit

  • 16 ounces French bread (sliced into 1-2 inch chunks)
  • 1 pound berries or fruit (about 3 cups)

The nuts

  • ½ cup sliced almonds (or other nuts like pecans, walnuts, hazelnuts)

Instructions

  1. Preheat the oven to 400°F.
  2. Zest the orange and set the zest aside.
  3. Blend the silken tofu, maple syrup, oil, orange juice, vanilla, plant-based milk, salt, cinnamon, and nutmeg until smooth.
  4. Cut the bread into chunks and place in a large bowl.
  5. Pour the custard over the bread and toss to coat. Add half the orange zest and the berries, then mix gently.
  6. Transfer the mixture to a greased 9x13-inch baking dish, ensuring some fruit is on top.
  7. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden.
  8. Serve warm with maple syrup and powdered sugar.
