Instructions
- Preheat the oven to 400°F.
- Zest the orange and set the zest aside.
- Blend the silken tofu, maple syrup, oil, orange juice, vanilla, plant-based milk, salt, cinnamon, and nutmeg until smooth.
- Cut the bread into chunks and place in a large bowl.
- Pour the custard over the bread and toss to coat. Add half the orange zest and the berries, then mix gently.
- Transfer the mixture to a greased 9x13-inch baking dish, ensuring some fruit is on top.
- Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden.
- Serve warm with maple syrup and powdered sugar.
