Ingredients

Cranberry Maple Syrup

  • 10 ounce bag cranberries
  • ½ cup granulated sugar
  • ¼ cup maple syrup
  • ½ cup water
  • 1 teaspoon pure vanilla extract
  • a pinch kosher salt
  • 1 orange zest and juice

French Toast

  • 1 loaf bread (French loaf, dairy-free)
  • 1 cup JUST Egg
  • ½ cup almond milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon coconut oil or olive oil or butter
  • to taste powdered sugar (for topping)

Instructions

  1. Make the cranberry syrup by simmering cranberries, sugar, maple syrup, water, vanilla, salt, and orange juice and zest in a saucepan for about 10 minutes.
  2. In a shallow dish, whisk together the JUST Egg, almond milk, sugar, cinnamon, and vanilla.
  3. Heat a non-stick skillet and add oil or butter.
  4. Dip the bread slices into the egg mixture, allowing excess to drip off, and cook in the skillet until golden brown on both sides.
  5. Repeat with remaining bread slices.
  6. Dust with powdered sugar and serve with the cranberry syrup.
