Ingredients

Pizza Dough

  • cups part skim shredded mozzarella cheese
  • 2 oz full fat cream cheese
  • 1 large egg
  • cups almond flour
  • 2 tablespoons whey protein powder
  • to taste none olive oil for handling dough

Toppings

  • cups mozzarella cheese
  • ½ cup keto pizza sauce
  • 20 slices pepperoni
  • 1 small garlic clove

Instructions

  1. Preheat the oven to 425°F and position the racks.
  2. Melt the mozzarella and cream cheese in a microwave-safe bowl for 1½ to 2 minutes, stirring halfway through.
  3. Add the beaten egg to the melted cheese and mix until combined.
  4. Incorporate the almond flour and any seasonings, mixing thoroughly.
  5. Pat the dough onto a parchment-lined baking sheet or roll it out between two pieces of parchment.
  6. Dock the dough with a fork to prevent bubbling.
  7. Bake the crust for 8-10 minutes until golden.
  8. Rub the crust with a garlic clove, spread the pizza sauce, and top with mozzarella and pepperoni.
  9. Bake again until the cheese is melted.
  10. Cut into 6 pieces and serve.
