Ingredients

Pizza Dough

  • cups part skim shredded mozzarella cheese
  • 2 oz full fat cream cheese
  • 1 large egg
  • cups almond flour
  • 2 tablespoons whey protein powder
  • Olive oil to handle dough

Toppings

  • cups mozzarella cheese
  • ½ cup keto pizza sauce
  • 20 slices pepperoni
  • 1 small garlic clove

Instructions

  1. Preheat the oven to 425°F and position the racks.
  2. Melt the mozzarella and cream cheese in a microwave-safe bowl for 1½ to 2 minutes, stirring halfway through.
  3. Combine the melted cheese with the beaten egg in a food processor until mixed.
  4. Add almond flour and any seasonings to the cheese mixture and process until combined.
  5. Pat the dough onto a parchment-lined baking sheet or roll it out between two pieces of parchment.
  6. Dock the dough with a fork and bake for 8-10 minutes until golden brown.
  7. Rub the baked crust with garlic, spread the pizza sauce, and top with cheese and pepperoni.
  8. Bake again until the cheese is melted, then cut into pieces and serve.
