Lemon Creme Crumb Bars

Instructions
- Preheat the oven to 350°F.
- In a medium bowl, whisk together flour, oats, salt, and baking soda.
- Stir in granulated sugar and brown sugar until no clumps remain.
- Mix melted butter with vanilla and pour over dry ingredients, stirring until moistened.
- Press half of the crumb mixture into a greased 8x8-inch baking dish and bake for 15 minutes.
- In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract.
- Pour the lemon mixture over the baked crust and spread evenly.
- Sprinkle the remaining crumb mixture on top and bake for 23-26 minutes until golden.
- Allow to cool at room temperature, then refrigerate for 30 minutes to 1 hour before cutting into squares.
