Ingredients

The crust and topping

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups old fashioned rolled oats
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup granulated sugar
  • ½ cup packed light-brown sugar
  • ¾ cup unsalted butter, melted
  • 1 tsp vanilla extract

The lemon filling

  • 1 can sweetened condensed milk (14 oz)
  • 1 Tbsp lemon zest
  • cup fresh lemon juice
  • 2 large egg yolks
  • ½ tsp lemon extract

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together flour, oats, salt, and baking soda.
  3. Stir in granulated sugar and brown sugar until no clumps remain.
  4. Mix melted butter with vanilla and pour over dry ingredients, stirring until moistened.
  5. Press half of the crumb mixture into a greased 8x8-inch baking dish and bake for 15 minutes.
  6. In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract.
  7. Pour the lemon mixture over the baked crust and spread evenly.
  8. Sprinkle the remaining crumb mixture on top and bake for 23-26 minutes until golden.
  9. Allow to cool at room temperature, then refrigerate for 30 minutes to 1 hour before cutting into squares.
