Honey Butter

unsalted butter, softened

Instructions
- In a mixing bowl, combine flour and optional sugar, then grate in the cold butter.
- Make a well in the center and add buttermilk or milk, stirring gently until just combined.
- Let the dough rest in the fridge for about 10 minutes.
- Transfer the dough to a floured surface and knead gently 3-4 times.
- Pat or roll the dough to about ½ inch thick, then fold it over itself 6-8 times.
- Press down to about 1 inch thick and cut out biscuits using a cookie cutter.
- Brush biscuits with buttermilk and bake at 400°F for 12-15 minutes until lightly browned.
- While baking, mix honey and softened butter to make honey butter.
- Spread honey butter over warm biscuits before serving.
