Eggs in a Basket

Ingredients

  • 2 slices bread
  • 2 large eggs
  • 1 tablespoon softened butter
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Butter both sides of the bread.
  2. Cut a hole in the center of each slice of bread using a cookie cutter or a glass.
  3. Heat olive oil in a skillet over low/medium heat.
  4. Add the bread and the cutouts to the pan and toast for 3-4 minutes until golden brown, then flip.
  5. Crack an egg into each hole and cover the pan, cooking for 3-5 minutes depending on desired yolk doneness.
  6. Season with salt and pepper before serving.
