Ingredients

Hummus Ingredients

  • ¼ cup lemon juice
  • 2–3 cloves garlic
  • ½ teaspoon salt
  • ¾ cup tahini paste
  • cup water
  • ¼ cup olive oil
  • 1 can chickpeas, rinsed and drained
  • ½ teaspoon pepper
  • 1 teaspoon cumin
  • 1–3 teaspoons garam masala spice
  • 2–3 tablespoons creamy plain yogurt (optional)

Optional Tempering Oil

  • 2–3 tablespoons olive oil
  • ½ teaspoon fennel seeds
  • ½ teaspoon cumin seeds
  • ½ teaspoon black mustard seeds
  • a few curry leaves (optional)

Garnish

  • cilantro
  • pumpkin seeds
  • drizzle of olive oil

Instructions

  1. Blend lemon juice, garlic, and salt in a food processor until combined.
  2. Add tahini paste and water, then blend until smooth.
  3. With the motor running, slowly drizzle in olive oil until creamy.
  4. Add chickpeas and blend until very smooth, adding more water if necessary.
  5. Mix in cumin, pepper, and garam masala, adjusting to taste.
  6. For optional creaminess, stir in yogurt if desired.
  7. To make tempering oil, heat olive oil in a pan and add fennel, mustard, cumin seeds, and optional curry leaves until they pop.
  8. Create a well in the hummus and pour the tempering oil into it.
  9. Garnish with cilantro and pumpkin seeds, and serve with naan, pita, or veggies.
