Instructions
- Blend lemon juice, garlic, and salt in a food processor until combined.
- Add tahini paste and water, then blend until smooth.
- With the motor running, slowly drizzle in olive oil until creamy.
- Add chickpeas and blend until very smooth, adding more water if necessary.
- Mix in cumin, pepper, and garam masala, adjusting to taste.
- For optional creaminess, stir in yogurt if desired.
- To make tempering oil, heat olive oil in a pan and add fennel, mustard, cumin seeds, and optional curry leaves until they pop.
- Create a well in the hummus and pour the tempering oil into it.
- Garnish with cilantro and pumpkin seeds, and serve with naan, pita, or veggies.
