Ingredients

The green beans

  • 1 pound haricots verts or slender green beans
  • ½ cup water
  • ½ teaspoon fine salt

The sauce

  • 2 tablespoons unsalted butter
  • ¼ cup thinly sliced shallot
  • ½ cup sliced almonds
  • 2 teaspoons lemon juice
  • 1 tablespoon water
  • to taste freshly ground black pepper
  • to taste fine salt

Instructions

  1. Melt butter in a large skillet over medium-low heat and add sliced almonds, cooking until browned.
  2. Add shallots and cook for an additional minute, then stir in lemon juice and 1 tablespoon of water until thickened.
  3. Transfer the almond mixture to a bowl and set aside.
  4. In the same skillet, add green beans, ½ cup water, and ½ teaspoon salt, covering and cooking until nearly tender.
  5. Remove the lid and cook over medium-high heat until the liquid evaporates.
  6. Combine the reserved almond mixture with the cooked green beans, season to taste, and serve.
