Ingredients

The pork chops

  • 4 pieces boneless pork chops, trimmed

The seasoning and sauce

  • to taste salt
  • 2 teaspoons creole seasoning
  • 2 tablespoons cooking oil
  • 1-2 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 teaspoons thyme
  • ½ cup orange juice
  • 1 piece orange zest, finely grated
  • ¼ teaspoon ground cumin
  • 1 tablespoon Dijon mustard
  • 2 tablespoons parsley

Instructions

  1. Dry the pork chops thoroughly and season with salt and creole seasoning.
  2. Heat oil in a large skillet over medium-high heat and add the pork chops.
  3. Pan fry the pork chops for about 4 to 5 minutes on each side until golden brown and cooked through.
  4. Remove the pork chops from the pan and set aside.
  5. In the same skillet, add butter, garlic, and thyme, and sauté for about a minute.
  6. Add orange juice, orange zest, cumin, and mustard, stirring to scrape up any brown bits.
  7. Simmer the sauce until reduced by half, about 1 to 2 minutes, and adjust seasonings.
  8. Return the pork chops to the pan with any juices and coat them in the sauce, cooking for another minute or two.
  9. Remove from heat and serve with the pan sauce.
