Tender Slow Cooker Ribs

Ingredients

The ribs

  • 3 - 3 ½ lbs pork baby back ribs
  • 1 tsp ancho chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

The barbecue sauce

  • 1 ½ cups ketchup
  • ¼ cup apple cider vinegar
  • 2 ½ Tbsp molasses
  • 2 Tbsp brown sugar
  • 2 Tbsp steak sauce
  • 1 ½ Tbsp Worcestershire sauce
  • 1 Tbsp prepared yellow mustard
  • 1 tsp natural liquid hickory smoke flavor
  • 1 tsp unsweetened cocoa powder
  • tsp chipotle chili powder or cayenne pepper

Instructions

  1. Remove the membrane from the back of the ribs and cut them in half if necessary.
  2. Rinse and dry the ribs, then rub the spice mixture over both sides.
  3. Pour ½ cup of water into the slow cooker and place the ribs over the water.
  4. Cover and cook on low for 6 ½ to 7 hours until very tender.
  5. Prepare the barbecue sauce by mixing all sauce ingredients in a saucepan and simmering for 15 minutes.
  6. Once cooked, carefully transfer the ribs to a wire rack over a baking sheet.
  7. Brush the ribs with about ½ cup of barbecue sauce and broil for 2-3 minutes on each side to caramelize.
