Ingredients

The meat mixture

  • 2 lbs. lean ground beef or ground turkey
  • 2 teaspoons avocado oil or olive oil
  • 1 small yellow onion, diced
  • 1 small bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 1 6-ounce can tomato paste
  • ¾ cup water
  • 2 tablespoons yellow mustard or Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon smoked or sweet paprika
  • ½ teaspoon fish sauce (may substitute coconut aminos or tamari)
  • 1-2 teaspoons fine salt
  • ¼ teaspoon black pepper

For serving

  • as needed buns or oven-baked sweet potatoes or Instant Pot sweet potatoes

Instructions

  1. Heat a large skillet over medium to medium-high heat and add oil, onions, and peppers; sauté until onions soften.
  2. Add the ground beef and garlic, breaking up the meat and cooking until browned and nearly cooked through.
  3. Stir in tomato paste, water, mustard, vinegar, fish sauce, paprika, salt, and pepper; mix well and cook until hot and the meat is fully cooked.
  4. Taste and adjust seasonings as needed, then serve immediately over buns or baked sweet potatoes.
