Shrimp Scampi Linguine

Ingredients

The pasta

  • 8 oz linguine

The shrimp and sauce

  • 1 lb shrimp, peeled and deveined
  • ¼ teaspoon cayenne pepper
  • 2 oz unsalted butter
  • tablespoon olive oil
  • 5 cloves garlic, peeled and minced
  • 5 tablespoons white wine
  • 6 pieces cherry tomatoes, cut into halves
  • to taste salt
  • ¼ teaspoon sugar
  • 3 squirts lemon juice
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon Italian parsley, chopped
  • to taste shaved Parmigiano Reggiano, parmesan cheese

Instructions

  1. Cook the linguine according to package instructions.
  2. Sprinkle cayenne pepper over the shrimp and set aside.
  3. In a sauté pan, melt the butter and add olive oil.
  4. Sauté the garlic until aromatic, then add the shrimp.
  5. Cook the shrimp until half done, then add white wine, salt, and sugar.
  6. Add cherry tomatoes and cooked linguine to the pan, mixing well.
  7. Once the shrimp is fully cooked, add lemon juice, black pepper, and parsley.
  8. Toss everything together and serve immediately with shaved Parmigiano Reggiano.
