Ingredients

  • cups shredded unsweetened coconut
  • cups almond flour or meal
  • 2 Tbsp flaxseed meal
  • 3 Tbsp hemp seeds
  • 1/3 cup tahini
  • 4 Tbsp coconut butter (melted)
  • 1/4 cup cacao nibs
  • 1 pinch sea salt
  • 1/4 tsp ground cinnamon
  • 2-3 pitted dates

Instructions

  1. Blend all ingredients in a food processor until a thick paste forms.
  2. Adjust consistency by adding more coconut butter or tahini if too thick, or more almond flour or coconut if too thin.
  3. Scoop out 2-Tbsp amounts and arrange on a parchment-lined baking sheet.
  4. Chill in the freezer or refrigerator until firm.
  5. Store in the freezer for up to 1 month or in the refrigerator for up to 1 week.
