Waffle Ingredients

  • 1 cup oats, ground into a flour (or oat flour)
  • 1 ¼ cups gluten free flour mix
  • ½ teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon cinnamon (optional)
  • ¾ teaspoon sea salt
  • 2 teaspoons orange zest
  • 1 ½ cups cashew milk (or any nut milk)
  • 2 teaspoons apple cider vinegar or white vinegar
  • 1 tablespoon orange juice
  • ¼ cup unmelted vegan butter
  • ½ teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • ½ cup fresh or frozen cranberries

Cranberry Maple Compote Ingredients

  • ½ cup maple syrup (or agave)
  • ¼ cup fresh or frozen cranberries
  • 2 teaspoons orange zest

Instructions

  1. Mix cashew milk and apple cider vinegar and let sit for 3 minutes to create vegan buttermilk.
  2. In a large bowl, combine oat flour, gluten free flour, baking soda, baking powder, cinnamon, sea salt, and orange zest.
  3. In a separate bowl, mix the vegan buttermilk, orange juice, melted vegan butter, maple syrup, and vanilla extract.
  4. Combine wet and dry ingredients until mixed.
  5. Preheat the waffle maker and pour ½ cup of batter into each side.
  6. Cook until the waffle maker beeps, then keep warm in the oven.
  7. For the compote, heat all ingredients in a pot until cranberries pop, then cool.
  8. Serve waffles with the cranberry maple compote.
