Roasted Broccolini

Ingredients

The main ingredients

  • 2 bunches broccolini
  • tablespoons extra virgin olive oil
  • 3 cloves garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Optional additions

  • 3 tablespoons grated Parmesan
  • a pinch red pepper flakes
  • to taste freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. Trim the ends of the broccolini and cut thick stalks in half lengthwise.
  3. Place the broccolini on the baking sheet and add garlic on top.
  4. Drizzle with olive oil and sprinkle with salt and pepper, tossing to coat.
  5. Arrange the broccolini in a single layer and sprinkle with Parmesan if using.
  6. Roast for 10 to 15 minutes, rotating the pan halfway through.
  7. Remove from the oven and add additional salt and lemon juice if desired.
