Southwestern Turkey Burgers

Ingredients

The burgers

  • 2 lb ground turkey
  • ¼ cup almond flour
  • ¼ cup finely diced onion
  • 2 tablespoons fresh cilantro, diced
  • 2 teaspoons ground cumin
  • 3 cloves garlic, minced
  • 2 egg whites egg whites
  • to taste salt
  • to taste pepper

The guacamole

  • 2 whole avocados
  • 1 juice lime
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder

The spicy mayo

  • 2 roasted piquillo peppers
  • 1 small chipotle pepper (from a can of chipotle peppers in adobo sauce)
  • ½ cup mayo
  • 2 teaspoons lime juice

Other ingredients

  • 1 whole Roma tomato, sliced
  • to taste Butter or Boston lettuce
  • 6-8 buns hamburger buns

Instructions

  1. Heat the grill to medium-high heat, about 400°F.
  2. Blend the piquillo peppers, chipotle pepper, mayo, and lime juice until smooth for the spicy mayo and set aside.
  3. In a small bowl, mash the avocado with lime juice and salt for the guacamole and set aside.
  4. In a large bowl, mix the ground turkey, almond flour, diced onion, cilantro, cumin, garlic, egg whites, salt, and pepper until combined.
  5. Form the turkey mixture into 6-8 equal patties.
  6. Grill the patties for 4-5 minutes on each side, then remove from the grill.
  7. Toast the buns on the grill for 1 minute.
  8. Assemble the burgers with the bottom bun, spicy mayo, guacamole, patty, tomato, and lettuce.
