Pumpkin Pie Overnight Oats

Instructions
- The previous night, bring water to a boil.
- In a container, mix all ingredients except for protein powder and milk.
- Add boiling water and stir until well combined.
- Cover and refrigerate overnight or for at least 4 hours.
- In the morning, stir in protein powder if using.
- Transfer to a serving bowl and add milk.
- Top with a dollop of plain yogurt and half a pecan.
- Sprinkle with fresh nutmeg.
