Ingredients

The base

  • ½ cup pumpkin puree
  • ¼ cup old fashioned oats
  • 1 tbsp bulgur
  • 1 tbsp black chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp raw buckwheat groats
  • 1 tsp ground cinnamon
  • ¼ tsp four spice
  • 3-4 pieces candied ginger, finely chopped
  • 10 g pecans, chopped
  • 1 tsp agave nectar (or honey)
  • 1 cup boiling water
  • 1 scoop vanilla flavoured protein powder (optional)
  • ¼ cup unsweetened soy milk

Garnish

  • 1 tbsp 0% fat plain Greek yogurt
  • ½ cup pecans

Instructions

  1. The previous night, bring water to a boil.
  2. In a container, mix all ingredients except for protein powder and milk.
  3. Add boiling water and stir until well combined.
  4. Cover and refrigerate overnight or for at least 4 hours.
  5. In the morning, stir in protein powder if using.
  6. Transfer to a serving bowl and add milk.
  7. Top with a dollop of plain yogurt and half a pecan.
  8. Sprinkle with fresh nutmeg.
