Ingredients

The pudding

  • 2 pieces bananas
  • 1 cup coconut milk
  • 1 tbsp coconut flour
  • ½ tsp ginger root powder
  • 1 tsp cinnamon
  • ¼ cup chia seed
  • 1 tbsp maple syrup
  • ½ tsp vanilla
  • ½ tsp banana or banana cream extract

Toppings and mix-ins

  • ½ cup gluten free or grain free granola or chopped nuts
  • 1 tsp coconut sugar
  • ½ tsp ground ginger
  • 2 tbsp molasses

Instructions

  1. Blend the bananas, coconut milk, and spices together.
  2. Pour the mixture into a bowl and add maple syrup, chia seeds, and extracts.
  3. Refrigerate for at least an hour or overnight to thicken.
  4. Spoon the banana chia pudding into cups or bowls.
  5. Combine the granola, coconut sugar, and ground ginger in a small bowl.
  6. Add molasses to each cup and top with the granola mixture.
  7. Mix and enjoy!
