Ingredients

  • 4 Tablespoons Butter
  • 1 Onion sliced
  • 1 Head Red Cabbage, shredded, thinly (about 2 lb)
  • ½ teaspoon Kosher Salt (or ¼ tsp table salt)
  • teaspoon Pepper
  • ½ teaspoon Allspice
  • cup Balsamic Vinegar (or Apple Cider Vinegar)
  • 1 Tablespoon Sugar (or more to taste at the end)
  • 2 Granny Smith Apples peeled, cored and diced
  • cup Water (optional, for more sauce)

Instructions

  1. Prepare all vegetables before starting to cook.
  2. Turn on the Sauté setting in the Instant Pot and add the butter and onion, cooking until the onion starts to soften.
  3. Add the cabbage and stir, cooking for a few minutes while breaking up any clumps.
  4. Stir in the salt, pepper, and allspice.
  5. Add the balsamic vinegar and sugar, then stir.
  6. Incorporate the diced apples and water if using, and stir them in.
  7. Cancel the Sauté setting and select Pressure Cook/Manual for 4 minutes (2 minutes for firmer cabbage) on high pressure.
  8. Once cooking is done, perform a Quick Release of the pressure.
  9. Open the lid when the pin drops, and stir the cabbage.
  10. Serve hot with your choice of main dishes.
