Ingredients

  • 2 large green plantains
  • 1 tsp sea salt
  • ΒΌ cup tapioca starch
  • as needed none coconut oil or avocado oil (for cooking)

Instructions

  1. Slice the plantains into sections and boil them for 15 minutes to soften.
  2. Drain the plantains and let them cool slightly before peeling.
  3. Blend the plantains with salt until a sticky dough forms.
  4. Dust a surface with tapioca starch and roll out portions of the dough until thin.
  5. Heat a skillet over medium heat and grease lightly with oil.
  6. Cook the tortillas for about 3 minutes on each side until browned and dried out.
  7. Serve immediately or store leftovers in the refrigerator or freezer.
